Ingredients

Scale
  • 2 large flour tortillas
  • 1 cup cooked white or brown rice
  • 1 cup cooked black beans, drained and rinsed
  • 1 cup cooked shredded chicken (or beef for a richer version)
  • 1 tablespoon chipotle sauce or chipotle paste
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • ½ cup shredded cheddar or Monterey Jack cheese
  • ½ cup diced tomatoes
  • ¼ cup chopped red onions
  • ¼ cup fresh cilantro, chopped
  • ¼ cup sour cream or Greek yogurt
  • Salt and pepper to taste

Instructions

  1. Cook and season the protein: In a medium skillet over medium heat, heat a drizzle of olive oil. Add the shredded chicken and season with smoked paprika, cumin, garlic powder, salt, and pepper. Stir well to coat evenly.
  2. Add chipotle flavor: Stir in the chipotle sauce or chipotle paste until the chicken absorbs the smoky flavor. Adjust the heat level to taste.
  3. Warm the black beans: Heat the beans in a saucepan or microwave-safe bowl. Season lightly with salt and pepper. Mash slightly if desired for a thicker texture.
  4. Prepare the rice: Fluff the rice with a fork, add a pinch of salt, and a drizzle of lime juice to enhance the flavor.
  5. Assemble the burrito: Warm the tortillas until soft. Place rice in the center, followed by black beans, chipotle chicken, diced tomatoes, onions, cheese, and a spoonful of sour cream or Greek yogurt. Sprinkle with fresh cilantro.
  6. Roll the burrito: Fold the sides inward, then roll tightly from the bottom up. Make sure all ingredients are enclosed.
  7. Toast the burrito: Place the burrito seam side down in a hot skillet. Toast each side for 1–2 minutes until golden brown and slightly crispy.
  8. Serve: Cut in half and serve immediately with guacamole, salsa, or a fresh salad.

Notes

Adjust chipotle quantity to control the level of spiciness.

You can use leftover rice and cooked chicken to save time.

Substitute Greek yogurt for sour cream for a lighter option.

To make it vegetarian, replace the meat with grilled vegetables or tofu.

Store leftover burritos in the fridge for up to 3 days and reheat in a skillet.
