  • 1 cup wild mushrooms, chopped (mix of shiitake, cremini, and oyster)
  • 3 tablespoons unsalted butter, plus 1 tablespoon for brushing
  • 1 finely diced shallot
  • 1 teaspoon fresh thyme
  • 8 ounces cream cheese, softened
  • 1 sheet puff pastry, thawed

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large skillet over medium heat, melt 3 tablespoons of butter.
  3. Add 1 cup of chopped wild mushrooms and 1 finely diced shallot to the skillet.
  4. Sauté until the mushrooms release their moisture and become golden brown, about 8-10 minutes.
  5. Sprinkle in 1 teaspoon of fresh thyme during the last minute of sautéing.
  6. In a mixing bowl, combine 8 ounces of softened cream cheese with the sautéed mushrooms and shallots.
  7. Stir well until fully incorporated.
  8. On a lightly floured surface, roll out your thawed puff pastry into a rectangle about 1/4 inch thick.
  9. Transfer the rolled pastry onto a baking sheet lined with parchment paper, letting it hang over slightly on all sides.
  10. Spread the mushroom mixture evenly over the center of the pastry, leaving about an inch border all around.
  11. Fold up the edges of the pastry and brush them with melted butter to achieve golden perfection.
  12. Bake in your preheated oven for about 25-30 minutes or until the pastry is puffed and golden brown.
  13. Remove from oven and let cool slightly before slicing into squares or wedges.
  14. Garnish with additional thyme if desired and serve warm.
