Warm gooey cheesy pretzel bites are soft, chewy pretzel pieces filled with melted cheese and optional savory fillings like chicken ham and turkey bacon bits. They make a perfect snack or appetizer with a delicious golden crust and a satisfying cheesy center.

Ingredients

  • 1 ½ cups warm water (about 110°F/45°C)
  • 1 tablespoon sugar
  • 2 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 2 teaspoons salt
  • 2/3 cup baking soda
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or blend)
  • ½ cup chopped chicken ham (optional)
  • ½ cup cooked turkey bacon bits (optional)
  • Melted butter for brushing
  • Coarse salt for sprinkling (optional)

Instructions

  1. Combine warm water, sugar, and yeast in a large bowl. Let sit 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture. Stir to combine and knead on floured surface for 8–10 minutes until smooth.
  3. Place dough in a greased bowl, cover, and let rise until doubled, about 1 hour.
  4. Shred cheese and prepare fillings; set aside.
  5. Punch down dough and roll into a ½-inch thick rectangle. Cut into 2-inch squares.
  6. Place cheese and optional fillings in each square center. Fold dough over and seal edges tightly.
  7. Bring a large pot of water to boil, add baking soda. Boil pretzel bites for 30 seconds each, then remove with slotted spoon.
  8. Arrange bites on parchment-lined baking sheet. Brush with melted butter and sprinkle salt if desired.
  9. Bake at 425°F (220°C) for 12–15 minutes until golden brown.
  10. Cool slightly before serving.
