Instructions

  1. Mince the garlic and dice the onion. Peel and chop the potatoes into small cubes.
  2. Heat olive oil in a large pot over medium heat. Add garlic and onions. Sauté gently for 5 minutes until soft and fragrant, avoiding browning.
  3. Add the chopped potatoes. Stir and cook for 2 minutes.
  4. Pour in chicken broth slowly, stirring occasionally. Bring to a gentle boil.
  5. Reduce heat to low and simmer for 20 minutes, or until potatoes are tender.
