Ingredients

Scale
  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup strawberry puree (fresh or thawed frozen strawberries)
  • 1 3/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • Optional: powdered sugar or white chocolate for decoration

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the egg and vanilla extract until smooth.
  4. Gradually add the strawberry puree and mix until evenly incorporated.
  5. In a separate bowl, whisk together flour, baking powder, and salt.
  6. Slowly fold the dry ingredients into the wet mixture until a soft dough forms.
  7. Use a tablespoon or cookie scoop to portion the dough and roll into balls. Place them 2 inches apart on the prepared baking sheet. For heart shapes, gently flatten and use a cookie cutter.
  8. Bake for 10-12 minutes until edges are lightly golden. Remove from oven and cool on the baking sheet for 5 minutes.
  9. Transfer cookies to a wire rack to cool completely.
  10. Decorate with powdered sugar, white chocolate, or sprinkles if desired.

Notes

Chilling the dough before baking helps the cookies maintain their shape.

Slightly underbaking will result in a softer, chewier texture.

You can customize by adding chocolate chips, nuts, or lemon zest.
