  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • ½ cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 6 slices turkey bacon
  • 4 slices chicken ham
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Flatten chicken breasts between two sheets of plastic wrap to about ½ inch thick.
  3. Season both sides of the chicken with salt, black pepper, and paprika.
  4. In a small bowl, mix chopped spinach, crumbled feta, minced garlic, and lemon juice.
  5. Place one slice of chicken ham on each flattened breast. Spread an even layer of the spinach-feta mixture over the ham, leaving edges free.
  6. Roll each chicken breast tightly, tucking in the sides to secure the filling.
  7. Wrap each roll with a slice of turkey bacon and secure with toothpicks if needed.
  8. Heat olive oil in an oven-safe skillet over medium-high heat. Sear the rolls on all sides for 2–3 minutes per side until golden brown.
  9. Transfer the skillet to the oven and bake for 20–25 minutes or until internal temperature reaches 165°F (74°C).
  10. Remove from oven and let the rolls rest for 5 minutes.
  11. Slice into 1–2 inch pieces and serve.

Notes

You can prepare the rolls in advance and store in the fridge until baking.
