  • 1 cup fresh spinach, chopped
  • ½ cup crumbled feta cheese
  • 4 slices of turkey bacon
  • 4 slices of chicken ham
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, combine chopped spinach, feta cheese, minced garlic, and a pinch of salt and pepper. Mix well.
  3. Flatten each chicken breast to about ½ inch thickness using a meat mallet or rolling pin.
  4. Layer one slice of chicken ham and one slice of turkey bacon on each flattened chicken breast.
  5. Spread the spinach and feta mixture evenly across the chicken, leaving a small border.
  6. Roll each chicken breast tightly, tucking in the sides. Secure with toothpicks if needed.
  7. Season the rolls with paprika, oregano, salt, and pepper. Drizzle with olive oil.
  8. Heat a skillet over medium-high heat and sear the rolls for 2–3 minutes per side until lightly browned.
  9. Transfer the rolls to a baking dish and bake for 25–30 minutes, or until the chicken reaches 165°F (74°C) internally.
  10. Let the rolls rest for 5 minutes before slicing and serving.
