  • 1 tablespoon sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 tablespoon dried Italian herbs (or a mix of oregano, basil, thyme)
  • 1 teaspoon garlic powder
  • 1 ¼ cups warm water (around 110°F / 43°C)
  • 2 tablespoons olive oil
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. In a large bowl, mix the warm water and sugar until dissolved. Sprinkle the yeast on top and let it sit for 5–10 minutes, until foamy.
  2. In a separate bowl, whisk together flour, salt, garlic powder, and dried herbs.
  3. Add olive oil and the dry ingredients to the activated yeast mixture. Stir with a wooden spoon until a sticky dough forms.
  4. Turn the dough out onto a floured surface. Knead for 8–10 minutes, or until smooth and elastic.
  5. Place the dough in a greased bowl. Cover with a kitchen towel and let it rise in a warm place for 60–75 minutes, or until doubled in size.
  6. Punch down the dough and transfer it to a floured surface. Flatten gently, then sprinkle the mozzarella and Parmesan evenly over the dough.
  7. Fold the dough and knead lightly to distribute the cheese throughout.
  8. Shape the dough into a loaf and place it into a greased loaf pan or shape it freeform on a lined baking sheet. Cover and let it rise again for 30–40 minutes.
  9. Preheat the oven to 375°F (190°C). Bake the bread for 30–35 minutes, until golden brown and the loaf sounds hollow when tapped.
  10. Optional: Brush the hot bread with olive oil and sprinkle with chopped parsley.
  11. Let the bread cool on a wire rack before slicing and serving.
