  • 1/2 cup shredded mozzarella cheese (or cheddar)
  • 1 tablespoon almond flour
  • 1/4 teaspoon baking powder
  • A pinch of salt
  • 2 slices of cheddar or Colby Jack cheese (for the sandwich filling)
  • 1 teaspoon butter or non-stick spray (for grilling)

Instructions

  1. Preheat the waffle maker so it’s hot and ready by the time your batter is mixed.
  2. Make the batter: In a small bowl, beat the egg. Add shredded mozzarella, almond flour, baking powder, and salt. Stir well until fully combined.
  3. Cook the chaffles: Lightly grease the mini waffle maker. Pour in half of the batter, spreading it slightly toward the edges. Close the lid and cook for 3–4 minutes, or until golden and crisp. Repeat with the remaining batter to make the second chaffle.
  4. Assemble the sandwich: Place one chaffle on a clean surface. Add the cheese slices on top, then cover with the second chaffle.
  5. Grill the sandwich: Heat a skillet over medium-low heat. Add butter and place the chaffle sandwich in the pan. Grill each side for 2–3 minutes, pressing gently with a spatula, until both sides are golden and the cheese inside is fully melted.
  6. Serve warm: Remove from the skillet, let cool slightly, and enjoy your gooey, crunchy grilled cheese chaffle.

Notes

Feel free to substitute cheddar with provolone, Monterey Jack, or mozzarella for a milder flavor.

You can add herbs, garlic powder, or chopped green onions to the batter for extra flavor.

To make it more filling, include a slice of turkey bacon or chicken ham between the cheese layers.
