This tasty grilled cheese chaffle is a fun twist on a classic comfort food. With a base made from eggs and cheese, the chaffle replaces bread while still giving you the crispy, golden texture you love. It is low-carb, gluten-free, and full of flavor, making it a great choice for quick lunches, cozy dinners, or satisfying snacks.

Ingredients

  • 2 large eggs
  • 1 cup shredded mozzarella cheese (or cheddar for stronger flavor)
  • 1 teaspoon almond flour (optional, for structure)
  • ½ teaspoon baking powder
  • Pinch of salt and black pepper
  • 2 slices cheddar cheese (or your favorite melting cheese) for the filling
  • Butter for greasing the waffle maker and skillet

Instructions

  1. Preheat your waffle maker until fully hot.
  2. In a medium bowl, whisk the eggs until well blended.
  3. Stir in the shredded mozzarella cheese, almond flour, baking powder, salt, and pepper. Mix until combined.
  4. Lightly butter the plates of the waffle maker.
  5. Pour half the batter into the waffle maker and spread evenly. Close the lid and cook for 3–5 minutes until golden and firm. Remove and repeat with the remaining batter.
  6. Place one cooked chaffle on a clean surface. Top it with two slices of cheddar cheese. Cover with the second chaffle to form a sandwich.
  7. Heat a skillet over medium heat and melt a small amount of butter. Place the chaffle sandwich in the skillet.
  8. Press gently with a spatula and cook for 2–3 minutes per side until the outside is crisp and the cheese inside is fully melted.
  9. Remove from the skillet, slice, and serve hot.

Notes

You can use different cheeses such as gouda, provolone, or a mix for more flavor.

Add extras like tomato slices, spinach, or chicken ham for variety.

For spicier flavor, add jalapeños or a sprinkle of chili flakes inside the sandwich.
