Swicy Mango Crispy Rice Sushi is a creative twist on traditional sushi that blends the sweetness of ripe mango with a touch of spice from creamy sriracha mayo. This recipe transforms cooked sushi rice into crispy, golden bases topped with vibrant, fresh ingredients. Perfect for parties, snacks, or light meals, it’s easy to make, customizable, and full of satisfying textures.

  • 2 cups cooked sushi rice (or short-grain rice)
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp salt
  • 1 ripe mango, diced
  • 2 tbsp mayonnaise
  • 1 tsp sriracha or chili paste (adjust to taste)
  • 1 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 green onion, finely chopped
  • 1 avocado, sliced (optional)
  • 1 tbsp sesame seeds for garnish
  • Neutral oil for frying

Instructions

  1. Prepare the Rice:
    Cook the sushi rice according to package directions. While still warm, mix with rice vinegar, sugar, and salt. Fold gently until evenly seasoned, then let it cool completely.
  2. Shape the Rice:
    With slightly wet hands, form the rice into small rectangles or ovals, about 2 inches long and ½ inch thick. Place them on a parchment-lined tray.
  3. Chill the Rice:
    Refrigerate the shaped rice for at least 30 minutes to help them firm up before frying.
  4. Fry the Rice:
    Heat a thin layer of neutral oil in a skillet over medium heat. Add the chilled rice pieces and cook for 2–3 minutes per side until golden and crispy. Remove and drain on paper towels.
  5. Make the Spicy Mayo:
    In a bowl, mix mayonnaise, sriracha, and sesame oil until smooth. Adjust the spice level to your liking.
  6. Prepare the Toppings:
    Dice the mango, slice the avocado if using, and finely chop the green onion.
  7. Assemble the Sushi Bites:
    Place a small dollop of spicy mayo on each crispy rice square. Add diced mango, avocado slices, and a light drizzle of soy sauce. Garnish with sesame seeds and green onions.
  8. Serve Immediately:
    Enjoy while the rice is warm and crisp for the best texture and flavor.

Notes

You can prepare the rice bases ahead of time and store them in the refrigerator. Reheat briefly before topping.

Adjust the spiciness by varying the amount of sriracha or adding a squeeze of lime for a tangy touch.

Mango can be replaced with pineapple, papaya, or peach for a different tropical flavor.
