  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon ginger
  • 1/4 teaspoon salt
  • 1 tablespoon cornstarch
  • 2 sheets puff pastry (store-bought or homemade)
  • 1 tablespoon milk (for brushing)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine pumpkin puree, brown sugar, cinnamon, nutmeg, ginger, salt, and cornstarch. Mix until fully incorporated.
  3. Roll out the puff pastry on a lightly floured surface. Cut into 4-inch squares.
  4. Place about 2 tablespoons of the pumpkin mixture in the center of each square.
  5. Fold the pastry diagonally to form triangles. Press the edges gently and use a fork to crimp and seal the pasties.
  6. Brush the tops with milk for a golden finish.
  7. Bake for 20–25 minutes, or until the pastry is puffed and golden.
  8. Cool on a wire rack for a few minutes before serving.
