Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat 1 cup softened butter with 1 ½ cups granulated sugar for 3–4 minutes until creamy and fluffy.
  3. Add 2 eggs, one at a time, mixing well after each addition. Stir in 2 tsp vanilla extract until combined.
  4. In a separate bowl, whisk 3 cups flour, 1 tsp baking powder, and ½ tsp salt. Gradually add dry ingredients to wet mixture and mix on low speed until just combined. Avoid overmixing.
  5. Scoop dough into 1-tablespoon portions and roll into balls. Coat each ball generously with powdered sugar.
  6. Place balls on prepared baking sheets, leaving about 2 inches between each.
  7. Bake for 10–12 minutes, until cookies expand and crinkle on top. Centers should remain soft.
  8. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
  9. Optional: Decorate with pastel-colored sugar or sprinkles before serving.

Notes

Dough can be chilled for 15–30 minutes for firmer cookies.

Use different flavored extracts or zest for variety.

Store in an airtight container at room temperature for up to one week.

Freeze baked cookies for up to 3 months.
