  • ¾ cup all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • ⅓ cup unsalted butter, melted
  • 3 tablespoons honey
  • ½ cup chopped chicken ham or turkey bacon (optional)
  • Additional unsalted butter and honey for glaze (¼ cup butter + 2 tablespoons honey)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin pan or line with silicone liners.
  2. In a medium bowl, whisk together cornmeal, flour, baking powder, and salt.
  3. In a large bowl, beat eggs until smooth. Add milk, melted butter, and honey; mix well.
  4. Gradually add dry ingredients to wet ingredients, folding gently until just combined. Avoid overmixing.
  5. If desired, fold in chopped chicken ham or turkey bacon for a savory touch.
  6. Spoon batter into muffin pan cups, filling about three-quarters full.
  7. Bake for 15 to 18 minutes, or until a toothpick inserted comes out clean.
  8. While baking, melt ¼ cup butter and stir in 2 tablespoons honey to create the glaze.
  9. Remove poppers from oven and immediately brush glaze over each popper. Serve warm.
