  • 1 pound of carrots, peeled and trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme or ½ teaspoon dried thyme
  • Salt, to taste
  • Black pepper, to taste
  • Optional: a squeeze of fresh lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and trim the carrots. Cut thicker ones in half lengthwise for even cooking.
  3. Boil the carrots in salted water for 10–12 minutes until fork-tender.
  4. Drain and cool slightly.
  5. Arrange the carrots on a parchment-lined baking sheet.
  6. Gently smash each carrot using a potato masher or bottom of a sturdy cup.
  7. Drizzle with olive oil, ensuring even coating.
  8. Season with garlic powder, thyme, salt, and black pepper.
  9. Roast in the oven for 20–25 minutes, flipping halfway, until edges are golden brown.
  10. Optional: finish with a squeeze of lemon juice or sprinkle of chopped parsley.

Adjust roasting time depending on carrot size for best texture.
