This Slow Cooker Parmesan Garlic Chicken and Potatoes recipe is a comforting, flavorful meal that requires minimal effort. Tender chicken breasts are layered with baby potatoes, garlic, and parmesan, creating a rich, savory dish perfect for weeknight dinners or family gatherings.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes, halved
  • 4 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 2 tablespoons olive oil
  • 1 teaspoon dried Italian herbs
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • 1/4 cup chicken broth

Instructions

  1. Wash and halve the baby potatoes. Mince the garlic and grate the parmesan if necessary.
  2. In a small bowl, combine paprika, salt, pepper, and Italian herbs. Rub evenly over the chicken breasts.
  3. (Optional) Sauté minced garlic in 1 tablespoon olive oil for 1–2 minutes until fragrant.
  4. Drizzle 1 tablespoon olive oil on the bottom of the slow cooker. Layer halved potatoes evenly.
  5. Place seasoned chicken breasts on top of the potatoes. Sprinkle garlic over the chicken and potatoes, then add parmesan cheese.
  6. Pour 1/4 cup chicken broth into the slow cooker to keep the chicken moist.
  7. Cover and cook on low for 6–7 hours or high for 3–4 hours, until the chicken reaches 165°F and potatoes are tender.
  8. (Optional) Stir potatoes halfway through cooking for even flavor distribution.
  9. Garnish with fresh parsley and serve immediately.

Notes

Chicken thighs can be substituted for breasts.

Sweet potatoes or additional vegetables like carrots or green beans can be added.

Dish can be assembled ahead and refrigerated until cooking.

Leftovers freeze well for up to 3 months.
