Lentil Sloppy Joes are a wholesome and hearty alternative to the classic sloppy joe. Using lentils instead of beef, this recipe is packed with flavor, protein, and fiber while remaining budget-friendly and easy to prepare.   • 1 cup dried brown or green lentils, rinsed
  • 2 ½ cups water
  • 1 medium onion, finely chopped
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper to taste
  • 46 sandwich buns or rolls
  • Optional toppings: shredded cheese, sliced pickles, or fresh herbs
  • Optional add-ins: cooked turkey bacon or chicken ham

Instructions

  1. Place rinsed lentils in a medium saucepan with 2 ½ cups of water and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 20–25 minutes until tender. Drain any excess water.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and diced bell pepper. Sauté 4–5 minutes until softened. Add minced garlic and cook 1 more minute.
  3. Stir in tomato sauce and tomato paste, mixing until smooth. Add smoked paprika, chili powder, ground cumin, salt, and pepper. Simmer 5–7 minutes.
  4. Add cooked lentils to the skillet, stirring to coat evenly. Reduce heat to low and simmer 5–10 minutes. Add a splash of vegetable broth if mixture is too thick.
  5. Taste and adjust seasonings. Add maple syrup for sweetness or extra chili for heat if desired.
  6. Toast sandwich buns lightly to prevent sogginess.
  7. Spoon lentil mixture onto buns, add optional toppings, and serve immediately.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.

The lentil mixture can be frozen for up to 2 months. Thaw overnight before reheating.

Customize with extra vegetables or cooked turkey bacon/chicken ham for variation.
