  • 1 pound shrimp, peeled and deveined
  • 1 package cheese tortellini (fresh or frozen)
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon extra virgin olive oil
  • 1 cup chicken broth
  • 1 teaspoon dried oregano
  • juice of 1/2 lemon

Instructions

  1. Bring a large pot of water to a rolling boil and add salt generously.
  2. Add the tortellini to the boiling water and cook according to package instructions until they float to the top.
  3. Drain the cooked tortellini and set aside.
  4. In a large skillet over medium heat, melt 2 tablespoons of butter along with 1 tablespoon of olive oil.
  5. Once melted and bubbling, add about 4 minced garlic cloves and sauté until fragrant for around 30 seconds.
  6. Toss in about 1 pound of shrimp into the skillet with the sautéed garlic.
  7. Season the shrimp with salt, pepper, and about 1 teaspoon of dried oregano.
  8. Cook the shrimp until they are pink and opaque, which takes about 3-4 minutes depending on their size.
  9. Pour in approximately 1 cup of chicken broth and bring it all to a simmer for about 2-3 minutes.
  10. Add the drained tortellini back into the pan along with another tablespoon of butter and squeeze in juice from half a lemon.
  11. Gently fold everything together until well coated in the garlic sauce.
  12. Garnish with freshly chopped parsley if desired and serve immediately while hot.

Notes

Store leftovers in an airtight container.

Reheat gently on low heat.

Serve with a sprinkle of parsley.
