This shrimp stir fry with noodles is a quick, flavorful, and versatile dish perfect for busy weeknights.   • 250g shrimp, peeled and deveined
  • 200g noodles of your choice (rice noodles, egg noodles, or wheat noodles)
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium carrot, julienned
  • 100g broccoli florets
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, finely grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • 1 teaspoon cornstarch mixed with 2 tablespoons water (optional)
  • Salt and pepper, to taste
  • Spring onions and sesame seeds, for garnish

Instructions

  1. Cook noodles according to package instructions. Drain and set aside.
  2. Heat vegetable oil in a large pan or wok over medium-high heat.
  3. Add minced garlic and grated ginger, stirring constantly for 30 seconds until fragrant.
  4. Add shrimp to the pan. Cook 2–3 minutes on each side until pink and opaque. Remove shrimp and set aside.
  5. In the same pan, add bell peppers, carrot, and broccoli. Stir-fry for 4–5 minutes until crisp-tender.
  6. Return shrimp to the pan. Pour in soy sauce, oyster sauce, and sesame oil. Toss to coat evenly.
  7. If a thicker sauce is desired, add cornstarch-water mixture and stir for 1 minute until sauce thickens slightly.
  8. Add cooked noodles to the pan. Toss gently to combine and ensure noodles absorb the sauce.
  9. Season with salt and pepper to taste.
  10. Garnish with sliced spring onions and sesame seeds before serving.

Notes

For extra flavor, add chili flakes or sriracha.

Substitute shrimp with chicken, tofu, or beef for variety.

Use any preferred vegetables to suit your taste or seasonal availability.
