This Tomato Zucchini Pasta is a refreshing, wholesome dish made with simple ingredients like ripe tomatoes, zucchini, garlic, and fresh herbs. It’s quick to prepare, incredibly flavorful, and perfect for a light lunch or dinner. Whether served on its own or enhanced with protein options like grilled chicken or turkey bacon, this pasta delivers a satisfying, nourishing meal.

  • 250g pasta (spaghetti, penne, or your choice)
  • 2 medium zucchinis, sliced into half-moons
  • 3 ripe tomatoes, diced
  • 23 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste
  • 1/2 cup reserved pasta water
  • Handful of fresh basil or parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Reserve 1/2 cup of pasta water, then drain.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add minced garlic and sauté for 30–60 seconds until fragrant.
  3. Add zucchini slices to the skillet. Cook for 4–5 minutes, stirring occasionally, until tender but slightly firm.
  4. Stir in the diced tomatoes. Allow the mixture to cook for 5–7 minutes, stirring occasionally, until the tomatoes break down into a sauce.
  5. Season with salt and pepper. If the sauce becomes too thick, stir in small amounts of reserved pasta water.
  6. Add the cooked pasta to the skillet. Toss well to coat with the tomato and zucchini sauce. Add more pasta water if needed.
  7. Turn off the heat. Fold in chopped fresh basil or parsley.
  8. Serve hot, optionally topped with grated cheese or toasted seeds for added flavor and texture.

Notes

Use whole wheat pasta for added fiber.

Add protein by including grilled chicken or turkey bacon.

Substitute zucchini with yellow squash or bell peppers for variation.

Use cherry tomatoes for a sweeter flavor if desired.
