This sausage potato soup is a hearty and comforting dish that combines savory turkey sausage with tender potatoes in a creamy broth. Perfect for cozy dinners, it is easy to prepare, budget-friendly, and customizable to suit various tastes.

  • 1 pound turkey sausage, sliced
  • 4 medium Yukon Gold or Russet potatoes, peeled and diced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup milk or dairy alternative
  • 1 tablespoon olive oil or butter
  • Salt and pepper, to taste
  • 1 teaspoon dried thyme or 1 tablespoon fresh parsley, chopped

Instructions

  1. Peel and dice the potatoes into bite-sized pieces.
  2. Finely chop the onion and mince the garlic cloves.
  3. Slice the turkey sausage into rounds or chunks.
  4. Heat olive oil or butter in a large pot over medium heat.
  5. Add the turkey sausage and cook until browned, about 5–7 minutes. Remove and set aside.
  6. In the same pot, sauté onion and garlic until translucent, about 3–4 minutes.
  7. Return the sausage to the pot. Add diced potatoes and pour in chicken broth, ensuring the ingredients are covered by about an inch.
  8. Season with salt, pepper, and thyme or parsley. Bring to a boil.
  9. Reduce heat and simmer gently for 20–25 minutes until potatoes are tender.
  10. Stir in milk or dairy alternative. Heat through without boiling.
  11. Adjust seasoning as needed. Optionally, mash some potatoes or add a flour slurry for thicker soup.
  12. Serve hot.

Notes

For added flavor, include diced carrots or celery during the sauté step.

Substitute turkey sausage with chicken or beef sausage if preferred.

Avoid boiling the soup after adding milk to prevent curdling.

Leftovers store well and can be frozen for future meals.
