Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine 1 pound of fresh salmon (finely chopped), 1 cup of breadcrumbs, 1 beaten egg, 2 finely chopped green onions, and 2 tablespoons of freshly squeezed lemon juice.
  3. Mix well until all ingredients are thoroughly incorporated.
  4. Using your hands, shape about two tablespoons of the mixture into golf ball-sized spheres.
  5. Arrange them on a lined baking sheet, giving each ball enough space to breathe.
  6. Place the salmon balls in your preheated oven and bake for about 20-25 minutes or until they turn golden brown and cooked through.
  7. While waiting for your salmon balls to bake, prepare your avocado sauce by combining one ripe avocado, 1 tablespoon of Dijon mustard, juice from half a lemon, and half a cup of fresh cilantro leaves in a blender.
