This Roasted Tomato and Garlic Ricotta Pasta is a comforting, affordable, and flavorful dish that comes together quickly.   • 12 oz pasta (penne, rigatoni, or fusilli)
  • 1 ½ cups ricotta cheese (preferably whole milk)
  • 2 cups cherry tomatoes or grape tomatoes
  • 6 garlic cloves, peeled
  • 2 tbsp olive oil
  • ½ tsp crushed red pepper flakes (optional)
  • ½ tsp dried oregano or Italian seasoning
  • Salt and pepper, to taste
  • ¼ cup reserved pasta water (or more as needed)
  • Fresh basil, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking tray lined with parchment paper, spread the cherry tomatoes and peeled garlic cloves.
  3. Drizzle with olive oil and season with salt, pepper, red pepper flakes (if using), and dried oregano.
  4. Toss to coat everything evenly.
  5. Roast in the oven for 25–30 minutes, or until the tomatoes are blistered and the garlic is golden and tender.
  6. Meanwhile, boil a large pot of salted water.
  7. Add the pasta and cook until al dente according to package instructions.
  8. Reserve 1 cup of pasta water, then drain the pasta.
  9. In a large mixing bowl, add ricotta cheese.
  10. Mash the roasted garlic into the ricotta and mix well until smooth.
  11. Add the hot pasta directly into the bowl with the ricotta.
  12. Pour in about ¼ cup of reserved pasta water and stir to combine.
  13. Adjust the amount of water until the sauce reaches your desired creaminess.
  14. Gently fold in the roasted tomatoes along with their juices.
  15. Taste and season with more salt or pepper as needed.
  16. Serve warm, garnished with chopped fresh basil and optional grated Parmesan.

Notes

Use turkey bacon or chicken ham for added protein.

Stir in greens like baby spinach for extra nutrition.

Avoid overmixing the tomatoes to keep them intact.

The sauce thickens as it cools; loosen with warm water when reheating.
