  • thick slices sourdough bread
  • 1 cup fresh ricotta cheese
  • ripe tomatoes, sliced
  • extra virgin olive oil, for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place thick slices of sourdough bread on a baking sheet.
  3. Toast them in the oven for about 8-10 minutes until they are golden brown and crispy.
  4. In a medium bowl, scoop out 1 cup of fresh ricotta cheese.
  5. Add a pinch of salt and pepper to taste and mix well until everything is combined and smooth.
  6. While your sourdough is toasting, slice ripe tomatoes into thin rounds—about ¼ inch thick.
  7. Once your sourdough is perfectly toasted, spread a generous layer of your ricotta mixture on each slice.
  8. Now add the tomato slices on top of the ricotta spread, arranging them artfully.
  9. Finish by drizzling olive oil over everything and followed by a splash of balsamic vinegar.
