Ingredients

  • 2 cups all-purpose flour
  • 1 cup cold unsalted butter, cubed
  • 1 cup pumpkin puree
  • 3/4 cup brown sugar
  • 1 teaspoon cinnamon

  • 56 tablespoons ice-cold water
  • Pecan pieces (optional)

Instructions

  1. In a large mixing bowl, combine 2 cups of all-purpose flour with 1 cup of cold cubed unsalted butter.
  2. Using your fingers or a pastry cutter, blend until the mixture resembles coarse crumbs.
  3. Add 1/4 teaspoon salt and gradually mix in 5-6 tablespoons of ice-cold water until the dough comes together.
  4. Divide the dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. In another bowl, mix together 1 cup of pumpkin puree with 3/4 cup of brown sugar, 1 teaspoon cinnamon, and 1/4 teaspoon nutmeg until smooth.
  6. If using pecans for added crunch, fold them in now.
  7. Preheat your oven to 375°F (190°C).
  8. On a floured surface, roll out one disc of chilled dough into a rectangle about 1/8 inch thick.
  9. Cut rectangles about 3×4 inches from your rolled-out dough using a sharp knife or pizza cutter.
  10. Place half of these rectangles on a baking sheet lined with parchment paper.
  11. Spoon about 2 tablespoons of pumpkin filling onto each rectangle—be careful not to overfill.
  12. Top each filled rectangle with another dough piece and press down around the edges to seal tightly.
  13. Use a fork to crimp the edges for an adorable design and cut small slits on top for steam to escape.
  14. Bake in your preheated oven for about 20-25 minutes or until golden brown and puffed up.
  15. Allow your PUMPKIN POP TARTS to cool slightly before transferring them to a wire rack.
  16. In the meantime, whisk together some icing sugar with water until smooth and drizzle this sweet glaze over your tarts before serving.
