  • 1 cup pumpkin puree
  • 2 cups all-purpose flour
  • 1 teaspoon kosher salt
  • ¾ cup warm water
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese

  • Dried herbs (such as rosemary or thyme), to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Lightly grease your baking sheet with olive oil.
  3. In a large mixing bowl, combine 2 cups of all-purpose flour and 1 teaspoon of kosher salt.
  4. Gradually add in about ¾ cup of warm water while mixing until a dough forms.
  5. Knead the dough on a floured surface for about 5 minutes until smooth and elastic.
  6. Roll out the dough into a circle about 12 inches in diameter.
  7. Transfer the rolled-out dough carefully onto your prepared baking sheet.
  8. In another bowl, combine 1 cup of pumpkin puree, 1 cup of ricotta cheese, and half a cup of shredded mozzarella cheese, and season with salt and herbs.
  9. Mix the pumpkin mixture thoroughly until everything is well-blended.
  10. Spread the pumpkin mixture evenly over the rolled-out dough, leaving a small border around the edges.
  11. Top with additional mozzarella cheese if desired.
  12. Place your assembled pizza in the preheated oven and bake for about 20-25 minutes or until the crust is golden brown and bubbly.
  13. Remove from oven and let cool slightly before slicing.
  14. Garnish with fresh herbs before serving.
