Pumpkin Cheesecake Truffles are a no-bake dessert that combines the creamy texture of cheesecake with the seasonal flavor of pumpkin. Each truffle is coated in smooth chocolate and decorated with optional toppings, making them perfect for fall gatherings, holiday celebrations, or as a simple homemade treat.

  • 1 cup pumpkin puree
  • 1 ½ cups graham cracker crumbs (or digestive biscuits)
  • 1 cup powdered sugar
  • 1 teaspoon pumpkin pie spice (or cinnamon, nutmeg, and cloves)
  • 1 teaspoon vanilla extract
  • 2 cups chocolate chips or melting chocolate (dark, milk, or white)
  • Optional: crushed nuts, graham cracker crumbs, or ground cinnamon for garnish

Instructions

  1. Place softened cream cheese in a large mixing bowl. Add pumpkin puree and mix until smooth and creamy.
  2. Stir in powdered sugar, pumpkin pie spice, and vanilla extract. Mix well so the filling is evenly flavored.
  3. Add graham cracker crumbs and fold them into the mixture until it forms a thick, dough-like texture.
  4. Cover the bowl and refrigerate for 30 minutes to allow the mixture to firm up.
  5. Once chilled, scoop small portions of the mixture and roll them into smooth balls using your hands. Place them on a parchment-lined baking tray.
  6. Melt the chocolate in a heatproof bowl using a microwave in short intervals or a double boiler. Stir until smooth and glossy.
  7. Dip each truffle into the melted chocolate, coating it completely. Lift with a fork, let excess drip off, and place back on the tray.
  8. While the coating is still soft, sprinkle with crushed nuts, crumbs, or a light dusting of cinnamon for decoration.
  9. Place the tray in the refrigerator until the chocolate is firm and set. Serve chilled.

Notes

Make sure the cream cheese is fully softened before mixing to ensure a smooth filling.
