These protein-packed homemade pop tarts are a wholesome twist on the classic pastry. With a flaky crust, customizable fillings, and a boost of protein, they make the perfect breakfast, snack, or lunchbox treat. Easy to prepare and affordable, they’re a great way to enjoy a nostalgic favorite with added nutrition.

Ingredients

  • 2 cups all-purpose flour
  • ½ cup protein powder (vanilla or unflavored)
  • ½ teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 3 tablespoons Greek yogurt
  • 2 tablespoons honey or maple syrup
  • 1 egg, beaten (for brushing)
  • ½ cup strawberry jam, peanut butter, or chocolate spread (for filling)
  • ½ cup powdered sugar (for optional glaze)
  • 23 teaspoons milk (to thin glaze, optional)

Instructions

  1. In a large mixing bowl, whisk together flour, protein powder, and salt.
  2. Add the cold cubed butter. Use a pastry cutter or two forks to cut the butter into the mixture until it resembles coarse crumbs.
  3. Stir in Greek yogurt and honey (or maple syrup). Mix gently until a dough forms. If dry, add a teaspoon of cold water at a time until smooth.
  4. Wrap the dough in plastic wrap and refrigerate for 30 minutes.
  5. Lightly flour your work surface. Roll the chilled dough into a rectangle about ⅛-inch thick. Trim the edges for even sides.
  6. Cut into smaller equal rectangles. Each pop tart requires two rectangles.
  7. Place 1–2 tablespoons of filling in the center of half the rectangles. Leave space at the edges.
  8. Brush edges with beaten egg. Cover with another rectangle of dough.
  9. Press edges to seal with your fingers, then crimp with a fork.
  10. Transfer to a parchment-lined baking sheet. Poke small holes on the tops with a fork.
  11. Brush tops lightly with beaten egg.
  12. Bake in a preheated oven at 180°C (350°F) for 20–25 minutes, or until golden brown.
  13. Cool on a wire rack.
  14. For the glaze (optional), whisk powdered sugar with milk until smooth. Drizzle over cooled pop tarts and let set before serving.

Notes

Resting the dough in the fridge ensures a flakier crust.

Do not overfill the pop tarts to prevent leakage during baking.

For extra flavor, sprinkle cinnamon or drizzle nut butter over the glaze.

These can be frozen after baking and reheated as needed.
