  • 1/2 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup heavy cream (plus extra for brushing)
  • Optional glaze: 1 cup powdered sugar, 2–3 tablespoons milk, 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. Add cold cubed butter to the dry ingredients. Cut in using a pastry cutter or fingers until mixture resembles coarse crumbs.
  4. In a separate bowl, combine pumpkin puree, egg, and vanilla extract. Stir in heavy cream until smooth.
  5. Make a well in the dry ingredients and pour in the wet mixture. Fold gently until just combined.
  6. Turn dough onto a floured surface and pat into an 8-inch circle about 1 inch thick. Cut into 8 wedges.
  7. Place wedges on the prepared baking sheet, spacing slightly apart. Brush tops with cream.
  8. Bake for 18–22 minutes, until golden brown and a toothpick comes out clean.
  9. Cool on the baking sheet for 5 minutes, then transfer to a wire rack.
  10. Optional: Prepare glaze by whisking powdered sugar, milk, and vanilla until smooth. Drizzle over cooled scones.

Notes

Use cold butter to achieve flaky layers.

Do not overmix the dough to keep scones tender.

Customize with chocolate chips, nuts, or dried cranberries.

Pumpkin puree should be plain, not pie filling.
