  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, light
  • 2 large eggs, at room temperature
  • 1 teaspoon peppermint extract
  • 1/3 cup cocoa powder
  • 1 cup white chocolate chips
  • peppermint candies or crushed candy canes, for garnishing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line two baking sheets with parchment paper.
  3. In a medium bowl, whisk together 2 cups of all-purpose flour and 1 teaspoon of baking powder until well combined.
  4. In a large mixing bowl, beat together 1 cup of softened unsalted butter, 1/2 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy—about 3-4 minutes.
  5. Add in 2 large eggs one at a time, beating well after each addition.
  6. Mix in 1 teaspoon of peppermint extract until fully incorporated.
  7. Gradually fold in the dry ingredient mixture into the wet ingredients until just combined.
  8. Divide the dough in half.
  9. In one half, fold in 1/3 cup cocoa powder along with 1 cup white chocolate chips until evenly mixed.
  10. On your prepared baking sheets, drop alternating spoonfuls of each dough at least two inches apart.
  11. Using a toothpick or knife, gently swirl the doughs together.
  12. Bake in your preheated oven for about 10-12 minutes or until edges are lightly golden.
  13. Once out of the oven but still warm, sprinkle crushed peppermint candies on top.
  14. Allow them to cool slightly before transferring them to wire racks.

Notes

Store cookies in an airtight container.

Reheat briefly in the microwave.
