  • 4 cups arugula, fresh
  • 2 ripe pears
  • 1/2 cup walnuts, toasted
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 tablespoons lemon juice, freshly squeezed
  • 1/4 cup olive oil, extra virgin

Instructions

  1. In a small bowl, whisk together 3 tablespoons of honey, 1 tablespoon of Dijon mustard, and 2 tablespoons of freshly squeezed lemon juice until smooth.
  2. Slowly drizzle in ¼ cup of extra virgin olive oil while continuing to whisk until fully combined.
  3. Set the vinaigrette aside.
  4. Place ½ cup of walnuts in a dry skillet over medium heat.
  5. Stir frequently for about 4-5 minutes until the walnuts are golden brown and fragrant.
  6. Cut ripe pears in half, remove the core, then slice them thinly into half-moons.
  7. In a large bowl, combine 4 cups of arugula with your sliced pears and toasted walnuts.
  8. Sprinkle ½ cup crumbled feta cheese over the salad mixture.
  9. Pour your prepared vinaigrette over the salad mixture right before serving.
  10. Toss gently until everything is evenly coated.
  11. Garnish with extra walnuts or feta if desired.
  12. Serve immediately to enjoy the crunch from fresh arugula and juicy pears.
