It’s easy to prepare, versatile, and a great way to use leftover pumpkin purée while keeping things wholesome and affordable.

Ingredients

Scale
  • 1 pizza dough (store-bought or homemade)
  • 1 cup pumpkin purée
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme or rosemary
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese
  • Salt and black pepper to taste
  • Optional toppings: caramelized onions, sautéed mushrooms, grilled chicken, or fresh arugula

Instructions

  1. Prepare the dough:
Remove the pizza dough from the refrigerator 30 minutes before starting. Roll or stretch it on a floured surface into your desired shape, then place it on a parchment-lined baking sheet or pizza stone.
  2. Make the pumpkin sauce:
In a bowl, mix the pumpkin purée, olive oil, minced garlic, thyme (or rosemary), salt, and black pepper until smooth. Taste and adjust seasoning as needed.
  3. Assemble the pizza:
Spread the pumpkin sauce evenly over the dough, leaving a small crust border. Sprinkle half the mozzarella, followed by parmesan. Add your chosen toppings such as caramelized onions, grilled chicken, or mushrooms. Finish with the remaining mozzarella.
  4. Bake:
Preheat the oven to 220°C (425°F). Bake for 15–20 minutes or until the crust is golden and the cheese is bubbling.
  5. Finish and serve:
Remove the pizza from the oven and let it rest for 3–5 minutes. Drizzle with olive oil and garnish with fresh herbs or arugula if desired. Slice and serve warm.

Notes

Fresh pumpkin purée can be used in place of canned for a more natural flavor.

If you like a crispier crust, pre-bake the dough for 5 minutes before adding the sauce and toppings.

Add a sprinkle of chili flakes for a mild kick or a drizzle of honey for sweetness.
