With a few simple ingredients and no oven required, you can create a batch of cookies that are satisfying, versatile, and universally loved.

Ingredients

Scale
  • 3 cups cornflakes
  • 1/2 cup butter
  • 1 cup granulated sugar
  • 1/4 cup milk
  • 1/3 cup cocoa powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line a tray: Cover a baking tray or plate with parchment paper to prevent sticking.
  2. Combine chocolate base: In a medium saucepan, melt the butter over medium heat. Add sugar, milk, and cocoa powder. Stir constantly until smooth and glossy.
  3. Add flavor: Remove from heat. Stir in vanilla extract and a pinch of salt to enhance flavor.
  4. Mix with cornflakes: Place cornflakes in a large bowl. Pour the chocolate mixture over them. Gently fold with a spatula until each flake is coated evenly.
  5. Shape cookies: Drop spoonfuls of the mixture onto the prepared tray, leaving space between cookies.
  6. Set cookies: Allow to cool at room temperature for 30–45 minutes or refrigerate to set faster.
  7. Store: Transfer to an airtight container once set. Cookies can be kept at room temperature for up to one week.

Notes

Do not overheat the chocolate mixture; it should be smooth but not boiling.

Fresh cornflakes maintain crunch better.

Optional mix-ins: shredded coconut, chopped nuts, or dried fruits for added texture and flavor.

For extra indulgence, drizzle with melted white chocolate before setting.
