These No Bake Carrot Cake Bites are soft, spiced, naturally sweetened treats made with wholesome ingredients. They’re quick to prepare, freezer-friendly, and perfect for healthy snacking.   • 1 cup grated carrots (firmly packed)
  • 1 cup rolled oats
  • 1/2 cup crushed walnuts
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup pitted dates (soaked if dry)
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves (optional)
  • Pinch of salt

Instructions

  1. Wash, peel, and finely grate the carrots. Set aside 1 cup, firmly packed.
  2. If the dates are dry, soak them in warm water for 5–10 minutes. Drain and pat dry.
  3. In a food processor, add oats, dates, almond butter, and maple syrup. Pulse until a coarse, sticky dough forms.
  4. Add the grated carrots, coconut, cinnamon, nutmeg, vanilla, cloves (if using), and salt. Pulse until just combined.
  5. Transfer the mixture to a bowl. Stir in the crushed walnuts by hand for added texture.
  6. Scoop 1 tablespoon of the mixture and roll into a ball. Repeat until all the mixture is used.
  7. Place the bites on a parchment-lined tray or plate. Chill for at least 30 minutes to firm up.
  8. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 2 months.

Notes

Wet your hands slightly while rolling to prevent sticking.

You can swap the walnuts for almonds, pecans, or seeds.

For added sweetness, increase the maple syrup slightly.

Add a protein boost with 1 tablespoon of chia seeds or a scoop of protein powder.
