Ingredients

Scale
  • 1 cup cream cheese (or light cream cheese)
  • 1 scoop vanilla protein powder
  • ½ cup rolled oats
  • ½ cup fresh or frozen blueberries
  • 23 tablespoons honey or maple syrup
  • ¼ cup almond flour or crushed oats
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Add protein powder and mix until fully incorporated with no clumps.
  3. Stir in rolled oats for texture and structure.
  4. Drizzle in honey or maple syrup and mix thoroughly.
  5. Fold in blueberries gently to prevent crushing them.
  6. Adjust consistency by adding almond flour or crushed oats if mixture is too soft.
  7. Add vanilla extract and a pinch of salt, stirring to combine evenly.
  8. Scoop portions of the mixture and roll into bite-sized balls, or press into a lined square pan for bars.
  9. Place the bites on a tray lined with parchment paper.
  10. Refrigerate for at least 1 hour until firm, or freeze 30 minutes for a firmer texture.
  11. Serve chilled.

Notes

Swap blueberries with raspberries, strawberries, or a mixed berry combination.

Use plant-based cream cheese and agave syrup for a vegan version.

Roll in shredded coconut, finely chopped nuts, or crushed oats for extra texture.
