  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 cup butter, unsalted and melted
  • 2 large eggs, at room temperature
  • 8 ounces cream cheese, softened
  • green food coloring, gel type

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8×8 inch baking pan or line it with parchment paper.
  3. In a large mixing bowl, melt ½ cup of butter over low heat and then remove it from heat.
  4. Stir in 1 cup of granulated sugar until combined smoothly.
  5. Add in 2 large eggs one at a time, mixing well after each addition.
  6. Sift in ½ cup of unsweetened cocoa powder, ½ cup of all-purpose flour, and ½ teaspoon of baking powder.
  7. Stir until just combined; do not overmix.
  8. Pour the batter into the prepared baking pan and spread evenly using a spatula.
  9. Bake in your preheated oven for about 20-25 minutes or until a toothpick inserted comes out slightly sticky but not gooey.
  10. In another bowl, mix together 8 ounces of softened cream cheese and add in about 1/2 cup of powdered sugar until smooth.
  11. Add green food coloring until you reach your desired monster hue.
  12. Once the brownies have cooled completely, spread an even layer of cream cheese filling over them.
  13. Cut them into bite-sized squares before placing candy eyes on top.
  14. Garnish with extra sprinkles if desired and serve immediately.
