Monster Cookie Energy Balls are bite-sized, chewy treats packed with oats, peanut butter, chocolate chips, and wholesome mix-ins. Perfect for a quick snack, post-workout boost, or lunchbox addition, these energy balls are versatile, affordable, and easy to make.

Ingredients

Scale
  • 1 cup rolled oats
  • ½ cup peanut butter
  • ¼ cup honey or maple syrup
  • ½ cup chocolate chips
  • ¼ cup ground flaxseed
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • Pinch of salt

Instructions

  1. Prepare ingredients: Measure all ingredients and have them ready.
  2. Mix wet ingredients: In a medium bowl, combine peanut butter, honey or maple syrup, and vanilla extract. Stir until smooth.
  3. Combine dry ingredients: In another bowl, mix rolled oats, ground flaxseed, cinnamon, and salt evenly.
  4. Combine wet and dry: Gradually add dry ingredients to the wet mixture. Stir thoroughly until a thick dough forms.
  5. Add chocolate chips: Fold in chocolate chips evenly throughout the dough.
  6. Check dough consistency: If too sticky, add more oats; if too dry, add more peanut butter or honey.
  7. Shape energy balls: Roll dough into 1-inch balls using hands or a cookie scoop. Place on a parchment-lined tray.
  8. Chill: Refrigerate for at least 30 minutes to firm up.
  9. Store: Transfer to an airtight container. Refrigerate up to one week or freeze up to three months.

Notes

For a nut-free version, substitute peanut butter with sunflower seed butter.

Add shredded coconut, dried fruit, or chopped nuts for variety.

Adjust sweetness by increasing or reducing honey or chocolate chips.

Ensure balls are uniform in size for even texture and consistency.
