Merida’s Spell Cakes are soft, flavorful, and warmly spiced treats inspired by a touch of magic. Perfect for breakfast, snacks, or dessert, these cakes are versatile, customizable, and simple to make.

  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and lightly flour your cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream the softened butter and sugar until light and fluffy (about 3-5 minutes).
  4. Beat in the eggs one at a time, ensuring each is fully incorporated. Stir in vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with milk. Begin and end with the dry ingredients. Mix until just combined.
  6. Fold in optional ingredients such as nuts, dried fruits, or natural fruit juice.
  7. Pour the batter evenly into prepared pans and smooth the tops.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  10. Slice and serve as desired, with optional toppings like powdered sugar or fruit compote.
