Ingredients

Scale
  • 1 pizza dough (store-bought or homemade)
  • 34 cloves roasted garlic
  • 2 cups fresh spinach, washed and chopped
  • 1½ cups shredded mozzarella cheese
  • ½ cup ricotta cheese
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: sun-dried tomatoes, olives, fresh herbs

Instructions

  1. Preheat the oven to 475°F (245°C). Place a pizza stone in the oven if available.
  2. Roast the garlic: peel cloves, drizzle with olive oil, wrap in foil, and roast for 15–20 minutes until golden and soft. Mash into a paste.
  3. Roll out the pizza dough on a floured surface to desired thickness. Transfer to a parchment-lined baking sheet or preheated pizza stone.
  4. Brush dough lightly with 2 tablespoons olive oil.
  5. Spread the roasted garlic paste evenly over the dough, leaving a small border for the crust.
  6. Dollop ricotta cheese evenly across the pizza, then sprinkle shredded mozzarella over the top.
  7. Layer chopped spinach evenly over the cheese.
  8. Season lightly with salt and freshly ground black pepper; optionally sprinkle herbs like oregano or basil.
  9. Bake for 12–15 minutes until the crust is golden and cheese is melted and bubbly.
  10. Optional: add sliced sun-dried tomatoes, olives, or a drizzle of olive oil after baking.
  11. Allow pizza to cool for 2–3 minutes, then slice and serve immediately.
