This Healthy Hearty Lentil Pasta Sauce is a wholesome, protein-packed alternative to traditional pasta sauces. It combines tender lentils, aromatic vegetables, and rich tomato flavors for a satisfying, versatile, and budget-friendly meal. Perfect for pasta nights, meal prep, or as a base for other dishes.

  • 1 cup dry lentils
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, diced
  • 1 celery stalk, diced
  • 1 can (400g) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 2 tablespoons olive oil
  • 2 cups vegetable broth or water
  • Fresh parsley for garnish

Instructions

  1. Rinse and drain 1 cup of dry lentils.
  2. Heat 2 tablespoons olive oil in a large saucepan over medium heat.
  3. Sauté 1 finely chopped onion and 2 minced garlic cloves for 3–4 minutes until translucent.
  4. Add 2 diced carrots and 1 diced celery stalk, cook 5 minutes until softened.
  5. Stir in 1 can crushed tomatoes and 2 tablespoons tomato paste.
  6. Add 1 teaspoon dried oregano, 1 teaspoon dried basil, 1/2 teaspoon smoked paprika, 1/2 teaspoon black pepper, and 1 teaspoon salt.
  7. Pour in 2 cups vegetable broth or water and add the rinsed lentils. Stir to combine.
  8. Bring to a gentle boil, reduce heat, cover, and simmer 25–30 minutes, stirring occasionally. Check for lentil tenderness.
  9. Adjust seasoning as needed and mash some lentils for a smoother texture if desired.
  10. Remove from heat and garnish with fresh parsley before serving over pasta or other dishes.

Notes

Red lentils can be used for a creamier texture; reduce cooking time to 15–20 minutes.

The sauce can be customized with additional vegetables or spices.

Freezes well for up to three months.
