  • 1 pound ground turkey, 93% lean
  • 1 cup brown rice, cooked
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 2 cups lettuce, shredded (romaine or iceberg)
  • 1/4 cup BBQ sauce
  • 1/2 cup sour cream, low-fat

Instructions

  1. Bring 2 cups of water to a boil in a medium saucepan.
  2. Add 1 cup of brown rice, reduce heat to low, cover, and simmer for about 45 minutes until tender and fluffy.
  3. Fluff the rice with a fork after cooking.
  4. In a large skillet over medium heat, add 1 tablespoon of olive oil.
  5. Crumble in 1 pound of ground turkey along with salt and pepper to taste.
  6. Cook the turkey until browned and fully cooked through, about 7-10 minutes.
  7. Stir in 1/4 cup of BBQ sauce and let it cook together for another 2-3 minutes.
  8. Grab four serving bowls and add an even layer of cooked brown rice at the bottom of each bowl.
  9. Top each bowl with equal portions of seasoned ground turkey, halved cherry tomatoes, sliced avocado, and shredded lettuce.
  10. Drizzle additional BBQ sauce over each bowl and add a generous dollop of sour cream on top before serving.
