  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped green onions
  • 1 large egg
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup breadcrumbs (for coating)
  • Cooking oil spray or a few tablespoons neutral oil (for frying or baking)

Instructions

  1. In a large bowl, mix the cold mashed potatoes, cheddar cheese, Parmesan cheese, chopped green onions, egg, flour, garlic powder, salt, and black pepper until fully combined.
  2. Scoop out the mixture and shape into small balls, about the size of a golf ball. Gently flatten them if desired.
  3. Pour the breadcrumbs into a shallow dish. Roll each puff in breadcrumbs until evenly coated.
  4. Choose your cooking method:
        To Bake:
        – Preheat oven to 400°F (200°C).
        – Line a baking sheet with parchment paper and lightly grease it.
        – Place the puffs on the sheet and lightly spray or brush the tops with oil.
        – Bake for 20–25 minutes, flipping halfway through, until golden brown.
        To Pan-Fry:
        – Heat 2–3 tablespoons of oil in a non-stick skillet over medium heat.
        – Fry the puffs in batches for 3–4 minutes per side until golden and crisp.
        – Transfer to a paper towel-lined plate to absorb excess oil.
  5. Serve warm with your favorite dipping sauces.

Notes

Ensure mashed potatoes are thick and not runny.

Add more flour if the mixture is too soft to hold shape.
