This white chicken lasagna soup brings the hearty, creamy flavors of traditional lasagna into a comforting soup form. With tender chicken, turkey bacon, and chicken ham in a rich cheese-infused broth, it’s a satisfying and easy meal for any day.

  • 2 cups cooked, shredded chicken breast
  • 4 slices turkey bacon, chopped
  • 1 cup chicken ham, diced
  • 3 cloves garlic, minced
  • 1 medium yellow onion, chopped
  • 6 cups low-sodium chicken broth
  • 2 cups milk (or unsweetened plant-based milk)
  • 4 oz cream cheese, cut into pieces
  • ½ cup grated Parmesan cheese
  • ½ cup ricotta cheese
  • 1 tsp Italian seasoning (basil, oregano, thyme)
  • 2 cups fresh spinach or kale (optional)
  • 6 lasagna noodles, broken into bite-sized pieces
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook chopped turkey bacon and diced chicken ham until browned and crispy. Remove and set aside.
  2. In the same pot, sauté garlic and onion until translucent and fragrant, about 3-4 minutes.
  3. Add chicken broth and milk, stirring well. Bring to a gentle simmer.
  4. Add cream cheese pieces and stir continuously until melted and smooth.
  5. Mix in Parmesan cheese, ricotta cheese, Italian seasoning, salt, and pepper. Stir well.
  6. Add shredded chicken breast and stir to combine.
  7. Add broken lasagna noodles and cook for 8-10 minutes until tender, stirring occasionally.
  8. Stir in fresh spinach or kale during the last 2-3 minutes of cooking, if using.
  9. Return cooked turkey bacon and chicken ham to the pot, stirring to combine.
  10. Taste and adjust seasoning as needed. Serve warm.
