This Toffee Chex Mix is a sweet, crunchy, and irresistible snack that combines crispy cereal with a buttery toffee coating. It’s quick to make, affordable, and perfect for parties, holidays, or simply enjoying at home.

  • 8 cups Chex cereal (corn, rice, or a mix)
  • 1 cup packed brown sugar
  • 1 cup unsalted butter
  • ½ cup light corn syrup
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup mini chocolate chips (optional)
  • 1 cup pretzels or roasted nuts (optional)

Instructions

  1. Line a large baking sheet with parchment paper or lightly grease it with butter. Set aside.
  2. Place 8 cups of Chex cereal in a large mixing bowl.
  3. In a medium saucepan, combine 1 cup butter, 1 cup brown sugar, and ½ cup corn syrup. Cook over medium heat, stirring until the butter melts and the mixture blends.
  4. Allow the mixture to come to a gentle boil without stirring. Let it boil for 2–3 minutes until slightly thickened.
  5. Remove from heat and stir in 1 teaspoon baking soda and 1 teaspoon vanilla extract. The mixture will foam and expand.
  6. Pour the hot toffee mixture over the cereal. Use a spatula to toss gently until all pieces are evenly coated.
  7. Spread the coated cereal evenly on the prepared baking sheet. Sprinkle with pretzels, nuts, or chocolate chips if desired.
  8. Allow the mixture to cool completely at room temperature. Once hardened, break into clusters and serve.

Notes

For a nut-free version, omit the nuts and stick with cereal and pretzels.

For extra sweetness, drizzle melted chocolate over the cooled mixture.

Store in an airtight container at room temperature for up to 1 week.
