Ingredients

Scale
  • 3 ½ cups all-purpose flour
  • 2 ¼ teaspoons active dry yeast (1 packet)
  • 1 ¼ cups warm water (about 110°F / 43°C)
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, finely minced
  • 2 tablespoons fresh parsley, chopped (optional)
  • ¼ cup grated Parmesan cheese (optional)

Instructions

  1. In a small bowl, combine warm water, sugar, and yeast. Stir and let sit for 5–10 minutes until frothy.
  2. In a large bowl, mix flour and salt. Gradually add yeast mixture and olive oil. Stir until dough forms.
  3. Knead dough on a floured surface for 8–10 minutes until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for 1 to 1.5 hours, until doubled.
  5. Melt butter over low heat. Add minced garlic and cook gently for 1–2 minutes. Stir in parsley and remove from heat.
  6. Punch down dough, divide into 12 pieces. Roll each piece into an 8-inch rope and tie into a loose knot.
  7. Place knots on a parchment-lined baking sheet. Cover and let rise for 30 minutes.
  8. Preheat oven to 400°F (200°C). Brush knots with garlic butter, reserving some.
  9. Bake for 12–15 minutes until golden brown.
  10. Brush with remaining garlic butter and sprinkle Parmesan cheese if desired. Serve warm.

Notes

Make sure the water is warm but not hot to avoid killing the yeast.

Kneading well is key for soft knots.

Fresh garlic provides the best flavor; adjust the amount based on your taste.

Parsley and Parmesan are optional but add great freshness and richness.

For a cheesy version, try stuffing knots with small mozzarella pieces before tying.
