Instructions

  1. Wash and dice the potatoes into even cubes. Pat dry to remove moisture.
  2. Heat 1 tablespoon olive oil in a skillet over medium heat. Add potatoes, season with salt, pepper, and smoked paprika. Cook for 15–20 minutes until golden and tender, stirring occasionally. Transfer to a plate.
  3. Cut beef into bite-sized pieces and season with salt, pepper, and paprika.
  4. Heat 1 tablespoon olive oil in the same skillet over medium-high heat. Add beef in a single layer and sear 2–3 minutes per side. Remove beef from skillet.
  5. Reduce heat to medium, melt butter in the skillet, and add minced garlic. Stir 1–2 minutes until fragrant.
  6. Return beef and potatoes to the skillet, tossing in garlic butter. Cook 2–3 minutes to combine flavors.
  7. Garnish with chopped parsley and serve immediately.
