For the Dough:

  • 1 ½ cups warm water (approx. 43°C)
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 tbsp granulated sugar
  • 4 cups all-purpose flour
  • 1 tsp salt
  • 2 tbsp unsalted butter, melted

For the Baking Soda Bath:

  • 6 cups water
  • ½ cup baking soda

For the Topping:

  • 4 tbsp melted butter (for brushing)
  • ½ cup granulated sugar
  • 1 tbsp ground cinnamon

Instructions

  1. In a large bowl, stir warm water, yeast, and sugar. Let sit 5–10 minutes until foamy.
  2. Add melted butter, salt, and flour. Mix, then knead for 6–8 minutes until dough is soft and smooth.
  3. Place dough in a greased bowl, cover, and let rise for 1 hour until doubled.
  4. Punch down dough, divide into 8 equal pieces. Roll each into a rope about 45–50 cm long. Shape into classic pretzel form.
  5. Preheat oven to 220°C. Line baking sheets with parchment paper.
  6. Boil 6 cups water with ½ cup baking soda.
  7. Dip each pretzel in the baking soda bath for 20–30 seconds. Remove with slotted spatula. Place on baking sheet.
  8. Bake 12–15 minutes until golden and puffed. Let cool for 5 minutes.
  9. Brush warm pretzels with melted butter. In a bowl, mix sugar and cinnamon. Coat pretzels evenly in the mixture. Serve warm or store once fully cooled.

Notes

You can refrigerate the dough overnight after the first rise for better flavor.

Skip pretzel shaping for bite-sized treats.

Reheat baked pretzels in the oven for 5 minutes to restore softness.
