  • 2 cups vegetable broth, low-sodium
  • 2 tablespoons olive oil, extra virgin
  • 1 teaspoon garlic powder
  • 2 tablespoons soy sauce, low-sodium
  • sliced green onions, for garnish

Instructions

  1. Rinse 1 cup of short-grain rice under cold water until the water runs clear.
  2. Soak the rice in water for about 30 minutes.
  3. In a medium saucepan, combine the soaked rice and 2 cups of vegetable broth.
  4. Bring the mixture to a boil over medium-high heat, then reduce heat, cover, and simmer for about 18-20 minutes until all liquid is absorbed.
  5. Remove from heat and let it sit covered for an additional 10 minutes.
  6. Fluff the rice with a fork to separate grains.
  7. In a small bowl, mix together 1 tablespoon of olive oil, 1 teaspoon of garlic powder, and 2 tablespoons of soy sauce.
  8. Pour the mixture over the fluffy rice and gently fold it in to coat every grain.
  9. In a large skillet, heat another tablespoon of olive oil over medium-high heat until shimmering.
  10. Spoon in the seasoned rice mixture, spreading it evenly across the skillet.
  11. Cook without stirring for about 4-5 minutes or until the bottom turns golden brown and crispy.
  12. Using a spatula, gently flip sections of rice over to crisp up other sides and continue cooking for another 3-4 minutes.
  13. Once golden and crispy all around, remove from heat.
  14. Garnish with freshly sliced green onions just before serving.
