This slow cooker honey mustard chicken is a perfect combination of convenience and flavor. The chicken cooks slowly in a sweet and tangy sauce, resulting in tender, juicy meat. It is versatile, budget-friendly, and customizable, making it ideal for family dinners or meal prep.

  • 4 boneless, skinless chicken breasts (or thighs)
  • ½ cup honey
  • ½ cup Dijon mustard
  • 2 tablespoons whole-grain mustard
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 tablespoon soy sauce
  • ½ teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • ½ cup low-sodium chicken broth
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Clean and trim the chicken breasts or thighs, patting them dry.
  2. Place the chicken in a slow cooker in a single layer.
  3. In a medium bowl, whisk together honey, Dijon mustard, whole-grain mustard, olive oil, soy sauce, garlic, paprika, salt, and black pepper.
  4. Add chopped onion to the sauce mixture and stir to combine.
  5. Pour the sauce evenly over the chicken, making sure each piece is coated.
  6. Gently press the onion and garlic mixture over the chicken.
  7. Cover the slow cooker with the lid and cook on low for 6–7 hours or high for 3–4 hours.
  8. Check the chicken near the end of cooking; it should be tender and easily shredded or sliced.
  9. Optional: For a thicker sauce, remove the chicken, whisk 1 teaspoon cornstarch with 1 tablespoon cold water, stir into the sauce, and cook uncovered for 10 minutes before returning the chicken.
  10. Garnish with freshly chopped parsley and serve over your preferred sides.

Notes

Adjust sweetness or mustard flavor to taste by adding more honey or Dijon mustard.

Chicken thighs are a juicier alternative to breasts.

Leftovers store well in the refrigerator for 3–4 days or can be frozen for up to 3 months.
