These Honey Butter Cornbread Poppers are soft, golden, and perfectly sweet with a buttery honey glaze. They are bite-sized, versatile, and ideal for snacks, sides, or gatherings. Easy to make, affordable, and loved by both kids and adults, they are a delightful treat any time of the year.

  • 1 cup yellow cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 tbsp granulated sugar
  • ½ cup unsalted butter, melted
  • ¼ cup honey
  • 1 cup whole milk
  • 2 large eggs
  • 1 tsp vanilla extract
  • Additional 3 tbsp butter and 2 tbsp honey for glaze

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a mini muffin pan thoroughly or line with mini paper liners.
  2. In a medium bowl, whisk together cornmeal, flour, baking powder, salt, and sugar until evenly combined.
  3. In a separate large bowl, whisk together milk, eggs, vanilla, melted butter, and honey until smooth.
  4. Gradually fold the dry ingredients into the wet ingredients, mixing gently until just combined. Avoid overmixing.
  5. Spoon the batter into the prepared mini muffin pan, filling each cavity about two-thirds full. Use a small cookie scoop for uniform portions if desired.
  6. Bake for 10–12 minutes, until tops are lightly golden and a toothpick inserted in the center comes out clean.
  7. While baking, melt 3 tbsp butter and 2 tbsp honey together in a small saucepan or microwave-safe bowl. Stir until well combined.
  8. As soon as poppers come out of the oven, brush generously with the warm honey butter glaze.
  9. Let cool slightly before serving. Enjoy warm or at room temperature.

Notes

Optional: Add shredded cheese, chopped chicken ham, or corn kernels to the batter for extra flavor.

For a spicy twist, add a pinch of chili flakes to the glaze.

These poppers can be frozen and reheated in the oven at 350°F (175°C) for 5–7 minutes.
